Creating a blend of espresso coffee is not easy. Hours and hours of hard work are needed to cover very carefully the following ten steps:

  1.   Firstly, you need to sit down and plan your blend ‘on paper’. How strange it may appear, Write down what you have in mind. You must imagine what types of coffee you will blend together, before actually doing it.
  2.   Put in front of you on a table all the green coffees that are in your availability. As an example, you might have 4 Santos, 5 from Nicaragua, etc. An expert coffee alchemist (as I like to call them) may have over 50 types of coffee in his … ‘private collection’.
  3.   Take the first green coffee, the one that should represent your main ingredient. Say it is one of your Santos.
  4.   Roast 3 types of it: blonde, medium, dark. Put them apart with labels that will be helpful later to recognize them.
  5.   Take another coffee. Which one? Mmhm, we cannot disclose part of the secret. Proceed selecting more coffees, and roasting each of them with one or two or three intensities. How many coffees are needed to create an espresso blend? It depends. They can be up to 7-10 for the finest, most exclusive blends.
  6.   Once all coffees are roasted and labelled, let them have a rest for approximately 10 days.
  7.   When all coffees are ready, it is possible to start blending them. It is not an easy exercise at all: just consider that our Coffee Alchemist might have prepared so far from 5 up to 20+ different coffees (types of green coffee used, times the number of roasts for each of them). The number of possible combinations is huge! Anyhow, it is now time to take your coffee roadmap (the piece of paper as of point 1), and start the first combination blending the coffees (type and roast) at given percentages. Example: 35% Santos + 25% Ethiopia + … (numbers are just random).
  8.   Grind this first blend (differently for espresso or for mocha).
  9.   Brew and cup the coffee: how do you like it? Is it what you expected? What is missing? Too spicy? or just a little bit bitter? Would you like it more creamy? Etc. etc. Evaluation is key, in order to score this blend and figure out how to beat it with the next one.
  10.               Drink a glass of water to clean the mouth. Wait 15-20 minutes, then combine, grind, brew and cup the next blend.

Steps 8 to 10 are to be repeated, combination after combination, until the wished espresso blend is reached.

As said at the beginning, the above ten steps path is not an easy journey. The involved factors are:

  •       How many green coffees were selected
  •       How many roasts have you done for each of them
  •       How do you mix them, what is the percentage of each of those coffees in the ideal blend.

Great care, love, knowledge and patience are needed to achieve the best result, and ‘discover’ the right blend.

It is not a 1-day task. Very often, the Coffee Alchemist takes 2 months before leaving his lab fully satisfied, with a new ‘baby’ ready to delight our palate.

In this article we’re going to talk about espresso more specifically we’re going to talk about the beans that you can use for espresso. Espresso is special. Many of the things that we take as self-evident truths in other areas of coffee aren’t really applicable here to understand why espresso is so special. First we have to look at the concentration for that reason. For example espresso is brewed at a one to two ratio whereas a pure coffee can be brewed at anything from one to fifteen to one to eighteen the amount of total dissolved solids is eight to twelve percent in espresso. And in pure coffee it’s usually around one point two to one point three.

 

So, espresso is often eight to ten times stronger than pure. The time that it takes to brew these two kinds of coffee is also very different according to the ancient prescriptions espresso is brewed under pressure. And it should take around 30 seconds to pull a shot pool or coffee on the other hand takes a lot longer typically it will be something like three to four minutes. Another key difference between these two kinds of coffee is that espresso is often the base of a milk if you have some quite dark roast coffee then that would be ideal to use for espresso. If you were to brew this in an aeropress a puro it would be probably kind of boring the cup would lag structure. There wouldn’t be any perceptible acidity and it would probably taste kind of ashy and a little bit roasty.

 

However when they’re brewed at that much more intense espresso ratio the acidity is just right the sweetness really comes out and overall the balance is just a lot better. So this kind of goes to show that the rules are pretty different when it comes to espresso.

 

Now next up we have a medium roast. This bean works well as an espresso. You will probably have to grind finer and adjust the water temperature to get a little bit more sweetness out of the coffee. And you can also drink it as a poor French press and it will still taste good. If we go back just 10 and 20 years it wasn’t that common to use a coffee roasted this light for espresso but today it’s getting more and more popular.

The first compounds that were extracted when you brew coffee are the acids. Since espresso is just brewed in 30 seconds it doesn’t extract that much sweetness. So if you try to brew an ultralight roast then you don’t get very sweet cups you tend to get a lot of acid. You might meet some roasters who will tell you that this is how espresso is supposed to taste but it’s not.

 

Now let’s talk a little bit about what we call the espresso paradox. The Egyptian beans are grown under very specific circumstances and that’s what gives them the unique flavor. So when it comes to specialty coffee we typically value coffee that is grown at a higher altitude because that results in a denser bean and more flavor. This flavor is very easy to appreciate when you brew it at a 1 to 15 or 1 to 16 ratio.

 

What kind of coffee beans are the best for espresso?

Well, it’s up to personal taste but one thing has to be said about a lot of the rules that we normally talk about. When it comes to coffee they don’t really apply to espresso. One wouldn’t roast expensive beans from Panama for espresso. For example one would probably just use a cheaper Brazilian coffee. So, in short, it’s my personal choice.

 

It’s easy to taste in cupping pure aeropress all these kinds of standard brewing methods when it comes to espresso it’s like all these characteristics are less important. As we mentioned before, espresso is typically 8 to 10 times stronger and more concentrated than normal coffee. So you don’t need that much acidity, you don’t need that much floral character because the brewing method will amplify it all. So in that sense you can actually get away with using what is normally considered lower quality coffee and espresso. So it’s kind of interesting that we have a lot of rules that we tend to follow when it comes to specialty coffee we care a lot about single origin coffee and special lots when it comes to espresso a lot of these things aren’t that important so for instance lower altitude coffees are more common blends a lot more common.

 

So it’s interesting that this brewing method somehow improves coffees that are seen as inferior lower scoring coffees and it tends to mute the interesting characteristics of the really good coffees. This is especially a paradox because espresso equipment is so expensive it can be 100 times more expensive than regular coffee.
