Each step must be handled with care, precision, and attention to detail if you want to get the job done right.   1. Begin by sitting down and planning your blend on paper. It may seem strange, but write down what you have in mind. Imagine the types of coffee you want to blend together before actually doing it.
  2. Place all the green coffees that are available to you on a table in front of you. For example, you may have 4 Santos and 5 from Nicaragua. An expert coffee alchemist may even have over 50 types of coffee in their ‘private collection.’
  3. Select the first green coffee, the one that should represent your main ingredient. Let’s say it’s one of your Santos.
  4. Roast three types of it: blonde, medium, and dark. Label them clearly to distinguish them later.
  5. Choose another coffee, but we can’t disclose which one. Continue to select more coffees and roast them with one or two or three intensities. The number of coffees needed to create an espresso blend depends on your preference, but for the finest, most exclusive blends, it can be up to 7-10.
  6. Once all coffees are roasted and labeled, let them rest for about 10 days.
  7. It’s time to start blending the coffees, but it’s not an easy exercise. The number of possible combinations is huge! Use your coffee roadmap from step 1 and start the first combination, blending the coffees (type and roast) at given percentages. For example, 35% Santos + 25% Ethiopia + … (numbers are just random).
  8. Grind the first blend differently for espresso or mocha.
  9. Brew and cup the coffee, evaluating its taste. Is it what you expected? What is missing? Is it too spicy or just a little bit bitter? Do you want it creamier? Evaluating each blend is crucial to scoring it and figuring out how to improve it with the next one.
